Chile Chicken Enchiladas- Recipe Box #13

Here's another basic wooden recipe box:

I bought it on eBay from a seller in Gun Barrel City, Texas on March 16th, 2013.  The recipe is printed on a deposit slip for a couple named Roark and Alyce Barnes of Corsicana, TX.

I did a Google search and found an obituary for Roark, who passed in the fall of 2014, and also one for Alyce, who passed a few months later in the spring of 2015.  RIP Mr. and Mrs. Roark.

Here's the deposit slip/recipe:

Here's the recipe:

Chile Chicken Enchiladas

1/4 c. onion
2 garlic cloves, minced
1 T. butter
2 T. flour
1 c. chicken broth
1 can chopped green chiles
1 c. Monterey Jack cheese, divided
1/2 c. sour cream
2 c. cooked chopped chicken
4 flour tortillas

Make sauce of sauteed onion, garlic, butter.

Combine flour & broth.  Stir in chicken & b. pepper (green chiles?).  Boil 2 min. till thick.  Stir in cheese & sour cream.  Assemble and bake for 20 minutes (at 350 degrees?).

Enjoy!

"Pinnapple Cocoanut Bars"- Recipe Box #12

Although this box is in bad shape...

...it has some intriguing recipes in it.  I don't have any indication as to where I found it, but, today's recipes combines two of my favorite fruits..."pinnapple" and "cocoanut"!

Here's the card:

Here's the recipe:

"Pinnapple Cocoanut Bars"

1 c. crushed "pinapple" not drained, 3/4 c. sugar, 3 T. cornstarch, 1/4 tsp. salt, 1 T. butter, 1 T. lemon juice.

1/4 c. butter, 1 cup brown sugar, 1 1/2 (cups?) flaked "cocoanut", 1 c. flour, 1 tsp. salt.

Mix first four "indegridence".  Bring to a boil till thick & clean.  Remove & blend in the butter and the lemon juice.

Cream butter & brown sugar.  Add "cocoanut", flour & salt & mix till crumbly.  Place 1/2 in bottom of 9 X 9-inch pan.

Add filling & place rest of crumbly mixture on top.  Press down & bake in oven at 35 degrees (350?) for 30 minutes.

Enjoy!

Beefy Hash Brown Casserole- Recipe Box #11

I had HIGH HOPES for this box:

It's a "double decker", extra WIDE, and mom and dad bought it at an auction from a great aunt, or a fourth cousin, twice removed, so I was hoping for lots of "family recipes", and Iowa standards, but, unfortunately, 93% of the recipe cards are cut from magazines and newspapers, and are then glued on recipe cards.

I DID find a fun recipe for Beefy Hash Brown Casserole:

Here's the recipe:

Beefy Hash Brown Casserole

1 pkg. hash browns
4 T. oil
1 1/2 lbs. ground beef
1 pkg. brown gravy mix
1 c. water
1 pkg. frozen mixed vegetables
1 tsp. garlic powder or salt
1/2 c. grated cheese
f.f. (french fried?) onions (opt.)

Mix hash browns & oil.  Press to line baking pan.  Bake 15 min. (350 degrees?).

Brown ground beef, add the gravy mix, water, veggies, & seasoning, and cook for a few minutes.  Put into baked tater shell, and top with cheese & onions.

I'm ASSUMING you then put it back into the oven until the cheese melts, and starts to brown, but the recipe ends with the directions above...

Enjoy!!

"Cocoanut" Orange Jumbles- Recipe Box #10

Not sure where this box came from but there are several references to Mt. Ayr and Tingley (Iowa), including this business card...

...so it either came from Granny's Attic Antique Store in Mt. Ayr, or dad picked it up at an auction.  I LOVE the graphics on this box:

It was JAMMED FULL of recipes, and fun little pamphlets (like this one)...

...and I thought this one for "Cocoanut Orange Jumbles" looked good.  It's credited to "Aunt Biddie" (on the back of the card).

Here's the card:

Here's the recipe:

Cocoanut Orange Jumbles

3/4 c. shortening
1 1/4 c. sugar
2 egg yolks, well beaten
1. cocoanut
2 1/2 c. flour
pinch salt
1/2 tsp. soda
3/4 c. orange juice

Cream shortening & sugar together.  Add egg yolks & cocoanut & beat well.

Sift together flour, salt & soda.  Add to the cream mixture with orange juice; beat till smooth.

Drop by 1/2 teaspoon on greased baking sheet.  Bake at 425 degrees for about 10 or 12 minutes.

Enjoy!

Rice Croquettes- Recipe Box #9

I think I bought this box at the same time I bought the other one from Red Oak, Iowa.  It was QUITE a day for recipe boxes!  Here's the box:

The recipe I've chosen from this box is Rice Croquettes...they sound TASTY!

At the end of the recipe it says to "serve with maple sauce", but I can't find a recipe for it in the box, so...you're on your own for that one!  The recipe is a little "scattered", but here it is:

Rice Croquettes

1 c. hot boiled rice; 1 t. (tsp) sugar; 1 t. (tsp) butter; 1/4 t. (tsp) salt; 1 egg; 2 T. milk.    Beat all together.  Stiff shape in balls.  Roll in beaten egg and bread crumbs.  Fry in deep fat.  Drain on paper.  Candied cherry or raisin pushed in center.  Serve with maple sauce.

Enjoy!

Corn Casserole- Recipe Box #8

This box came from an antique store in Kansas City, Missouri.  It's very utilitarian, but here's the box:

I love corn, so was excited to find this recipe for Corn Casserole:

Velda must be/have been a very good cook...there are several of her recipes in this box.  Here's the recipe:

1 Jiffy corn bread mix
1 cup sour cream
2 eggs

Tallahasse Hush Puppies- Recipe Box #7

I'm not sure where this box came from...possibly Red Oak, Iowa.  Here it is:

I've always been a fan of hush puppies, so here's a tasty one:

Here's the recipe:

Tallahasse Hush Puppies

2 c. corn meal
2 t. (tsp?) baking powder
1 t. (tsp?) salt
1 1/2 c. milk
1/2 c. water
1 large onion

Sift the dry ingredients together.  Add milk and water.  Stir in chopped onion.  Add more meal or milk as may be necessary to form a soft but workable dough.  With the hands mold pieces of dough into pones (oblong cakes, about 5 inches long and 3 inches wide and about 3/4 of an inch thick).  Fry in deep fat or oil until well browned.

Enjoy!
