Amy's Visit!!!

Just spent a LOVELY few days with our friend Amy!  It's been a delightful couple of weeks having friends come to the cities for some "catching up"!!!!

She arrived on Tuesday, and spent the day with Robin and the girls.  They all came over for dinner on Tuesday evening.  I made my mock Carl's Jr. Santa Fe Chicken sandwiches, which are CLOSE, but not an exact match.  But...for those of us not lucky enough to have a Carl's Jr. anywhere close, it'll have to do!


Wednesday, I went over to Robin and Dave's and Robin, Amy, and I headed to the Galleria in Edina to shop (actually Amy and I shopped, and Robin had her nails "done").  After Robin was finished at the salon, we picked up the girls and headed to St. Paul so that they could all try the food trucks at Kellogg and Wabasha (see previous blog entry for MY first experience).



We got there a little later than my previous visit, so it was more crowded and the lines were longer at each of the trucks, but, they STILL had food (they run out the closer it gets to 12:30).  I had the El Paso hot dog at the Magic Bus Cafe.  Chipotle corn salsa, avocado, and sour cream on top of an all beef hot dog on a bun.  It was REALLY, REALLY good!



Amy had fish tacos, Robin had sweet potato and black bean tacos, Abigail had a hot dog, and Emilie had the bacon bratwurst...yum!




After the food trucks we walked around St. Paul for a little while, then headed to South Minneapolis for more shopping. 


We went to several new shoppes in the area, and stopped at Sebastian Joe's for an ice cream break.  I had the coffee oreo ice cream on a chocolate dipped cone...WOW!!





After shopping, we headed back to Robin and Dave's and relaxed for awhile.  After Dave came home from work, we had an AWESOME carne asada dinner on the new patio...VERY nice (and it wasn't unbearably hot, so we were able to remain on the patio for the entire meal!).

Today, Robin, Amy, and the girls went to a lake in Eden Prairie for the day, and I stayed home and cleaned out cupboards and the refrigerator (I'm SO exciting!), but Duane and I joined them all for a FABULOUS barbecue at Robin and Dave's this evening.  Hamburgers, hotdogs, potato salad, corn on the cob...AWESOME!

Amy heads back to Sheboygan tomorrow morning.  It was SOOOOO nice to spend some time together this week.  SUCH FUN!!!!
