Another AWESOME Weight Watchers Recipe!!!!

Sorry...getting a little TEDIOUS with the recipe posts, but I made this today, and it's TRULY awesome...!!!

Greek Syle Potato Salad

1 1/2 lbs. uncooked baby potatoes, red, washed and quartered
1/3 c. plain low fat Greek yogurt
1/4 c. reduced-fat mayonnaise
2 T. dill, fresh, chopped
2 tsp. fresh lemon juice
1 tsp. Dijon mustard
1 tsp. kosher salt (1/2 tsp. other salt)
1/4 tsp. black pepper, freshly ground
1 T. chives, minced
6 medium olives, kalamata, chopped
2 T. feta cheese, crumbled

Place potatoes in a medium sauce pan and add enough water to cover potatoes.  Bring to a boil over high heat.  Reduce heat to medium high and simmer until potatoes are fork tender, about 10 minutes.  Drain and let cool.

Meanwhile, in a small bowl, whisk together remaining ingredients.

Place cold potatoes into bowl.  Gently fold in yogurt/mayo mixture. 

6 servings:  3 points.
3 servings:  8 points.
