Yummo!!!

As I start the whole "losing weight" thing AGAIN, I ran across this recipe on the Weight Watchers boards.  It COULD be because it reminds me of a burger I had on Kauai, but...the truth of the matter is...it's really good!

It was posted by CJMartin717 (Cindy), and she KNOWS what she's doing...wow!  If ALL "healthy" food was this good, I'd BE at my goal weight by now!

Terrific Teriyaki Burgers
 
GLAZE:
1/4 cup ketchup
2 tablespoons reduced-sodium soy sauce
1 tablespoon brown sugar
1 tablespoon unsweetened crushed pineapple
1 1/2 teaspoons minced fresh ginger
1 garlic clove, minced
1/2 teaspoon sesame oil
 
BURGERS:
1 egg white, lightly beaten
1/3 cup dry bread crumbs
3 green onions, chopped
2 tablespoons unsweetened crushed pineapple
1 pound lean ground beef
1/2 pound lean ground turkey
 
GARNISH/FINISH:
6 slices fresh pineapple
6 reduced-fat, whole wheat hamburger buns
6 lettuce leaves
6 slices tomato
 
In a small bowl, combine the ketchup, soy sauce, brown sugar, pineapple, ginger, garlic and sesame oil; set aside.
 
In a large bowl, combine the egg white, bread crumbs, onions, and crushed pineapple.  Add beef and turkey and mix well.
 
Coat grill rack of George Foreman (or outdoor grill) with cooking spray.  Place burgers on grill, and spoon glaze on tops of burgers.  Flip burgers after three minutes and glaze other side of burgers with remaining mixture.  Cook three to four minutes more, until meat thermometer reads 165 degrees, and juices run clear.
 
Grill pineapple slices for 2-3 minutes on each side until heated through, and slightly charred.
 
Serve burgers and pineapple on buns with lettuce and tomato.
 
Yield:  6 servings.
