Recipes From Marion Mothers Club- Spiralbound Cookbook #8

As is the case with MOST of these spiralbound cookbooks, apparently, I have no idea where this one came from, but it was created by the Marion Mothers Club in Marion, Iowa, in 1984.

Here's the cookbook:

It's a little too "cutesy"...with chapter dividers like this...

...but has some great recipes in it, like this one for ROMA MEAT LOAF, attributed to Jane Cloud:

Roma Meat Loaf

1 1/2 lbs. ground beef
1 egg
3/4 c. cracker crumbs
1/2 c. finely chopped onions
2- 8 oz. cans tomato sauce with cheese (or plain)
1 tsp. salt
1/2 tsp. oregano
1/2 tsp. pepper
2 c. shredded Mozzarella cheese

Combine ground beef, egg, cracker crumbs, onion, 1/2 c. tomato sauce, salt, oregano, and pepper.  Mix well and shape into flat rectangle, about 10" x 12", on waxed paper.  Sprinkle mozzarella cheese evenly over meat mixture.  Roll up like jelly roll and press ends of roll to seal.  Place in shallow dish.  Bake 350 - 1 hr.  Drain off excess fat.  Pour on remaining tomato sauce.  Bake an additional 15 min.  Serves 4-6.
