Thrill of Hor d'Oeuvres- Spiralbound Cookbook #16

How could I pass up a cookbook with THAT title??!!  I actually bought this one this past weekend at the antique mall in Rogers, Minnesota.  Here's the cookbook:

No idea when it was printed, but the cover states that "Proceeds will provide Fridley students with a scholarship from All Fridley Staff".  The recipe I've chosen is for NIPPY ZIPPY CHEESE LOG because, let's face it...the name is SUPER FUN!!  The recipe is attributed to Dolores Sullivan.

Nippy Zippy Cheese Log

8 oz. pkg. cream cheese, softened
2 oz. to 4 oz. pkg. blue cheese, crumbled
4 pz. (1 cup) sharp Cheddar cheese, shredded
1/4 c. finely chopped onion
1 T. worcestershire sacue
1 T. lemon juice
3/4 c. chopped pecans
1/2 c. finely chopped fresh parsley

In large mixing bowl, combine all ingredients except pecans and parsley.  Beat for 2 minutes on medium speed until well blended.  Stir in 1/4 c. of the pecans (reserving 1/2 c. for coating).  Cover, chill mixture 1 hour or until firm.

Spread chopped parsley and reserved pecans evenly on sheet of plastic wrap or waxed paper.  Form chilled cheese mixture into log shape.  Roll in parsley and pecans.  Wrap.  Chill several hours.  Serve with crackers, chips, or thinly sliced snack rye bread.

Enjoy!
