Westphalia Centennial Cook Book- Spiralbound Cookbook #18

I also purchased this cookbook in Rogers, Minnesota a few weeks ago.  It was created for the centennial of Westphalia, Iowa (motto Religion * Freedom * Opportunity) in 1972.

Here's the cookbook:

The inscription inside the front cover states:  "Getting out a cook book is fun, but no picnic.  If we print jokes, people say we are silly-- if we don't, they say we are too serious.  If we clip things from other cook books, we are too lazy to write them ourselves-- if we don't-- we are too proud of our own stuff.  If we don't print contributions, we don't appreciate true geniuses-- if we do print them, the page is filled with junk.  Now, very likely, someone will say we swiped this from some other cook book.--- WE DID!!

Since rhubarb will be "coming along" soon (depending on where you live!), here's a spring recipe for RHUBARB COCONUT COOKIES.

Rhubarb Coconut Cookies

1/2 c. shortening
1/4. c. sugar
3/4 c. corn syrup
1 egg
1 c. rhubarb (cooked - thick)
2 c. flour
1 tsp. baking powder
1/2 tsp. soda
1/2 tsp. salt
1 tsp. nutmeg
1/4 tsp. cloves
1 c. coconut
1/2 c. raisins
1/2 c. nuts (chopped)

Mix first 5 ingredients together thoroughly.  Blend the next 6 ingredients.  Blend the rhubarb and flour mixtures together.  Stir in coconut, raisins and nuts.  Drop dough by heaping tsp. onto a greased sheet.  Bake for 15 to 18 minutes.  Makes 5 dozen.
