Chile Chicken Enchiladas- Recipe Box #13

Here's another basic wooden recipe box:


I bought it on eBay from a seller in Gun Barrel City, Texas on March 16th, 2013.  The recipe is printed on a deposit slip for a couple named Roark and Alyce Barnes of Corsicana, TX. 

I did a Google search and found an obituary for Roark, who passed in the fall of 2014, and also one for Alyce, who passed a few months later in the spring of 2015.  RIP Mr. and Mrs. Roark.

Chile Chicken Enchiladas

1/4 c. onion
2 garlic cloves, minced
1 T. butter
2 T. flour
1 c. chicken broth
1 can chopped green chiles
1 c. Monterey Jack cheese, divided
1/2 c. sour cream
2 c. cooked chopped chicken
4 flour tortillas

Make sauce of sauteed onion, garlic, butter.

Combine flour & broth.  Stir in chicken & b. pepper (green chiles?).  Boil 2 min. till thick.  Stir in cheese & sour cream.  Assemble and bake for 20 minutes (at 350 degrees?).
